Christmas chocolate bark

Indulge in triple chocolate Christmas bark with hazelnuts, walnuts, raspberries, and figs.
Ingredients:
  • 54.00 gm maple syrup
  • 50g hazelnuts, roasted
  • 2.40 gm sea salt
  • 200g dark chocolate, finely chopped
  • 200g milk chocolate, finely chopped
  • 30g walnuts, toasted, chopped
  • 30g dried figs, thinly sliced
  • 40.00 ml glace orange peel, chopped
  • 200g white chocolate, finely chopped
  • 50g pomegranate seeds
  • 10 frozen raspberries, sliced while frozen
  • Small handful rose petals, dried, crushed
Instructions:
  • Prepare 4 baking trays with baking paper. In a frying pan over medium-high heat, bring the syrup to a boil. Add hazelnuts and swirl the pan quickly. Cook for 2-3 minutes until the syrup thickens and the nuts are glazed. Transfer the mixture onto one of the prepared trays. Sprinkle with salt and allow it to set. Coarsely chop the mixture when ready.
  • Melt dark chocolate in a heatproof bowl over a pan of simmering water, ensuring the bowl doesn't touch the water. Stir until smooth. Pour over prepared tray and spread thinly into a 10 x 25cm rectangle. Quickly sprinkle with hazelnut mixture and let it set.
  • Melt the milk chocolate using the method from Step 2. Pour it over a prepared tray and spread thinly to a 10 x 25cm rectangle. Sprinkle with walnuts, figs, and peel, working quickly. Allow it to set aside.
  • Melt white chocolate using the method in Step 2, then pour it over the rest of the prepared tray. Spread it thinly to create a 10 x 25cm rectangle. Immediately sprinkle with pomegranate arils, raspberries, and rose petals. Allow it to set before serving.
  • Remove the baking paper from the bark and slice each piece into 8 portions. Keep the pieces in an airtight container with a layer of baking paper until you are prepared to package them.
