Ingredients:
  • 160g candy canes
  • 2 x 180g blocks good-quality white cooking chocolate, chopped
Instructions:
  • Crush candy canes by breaking them up and placing them in a plastic bag. Squeeze out the air, wrap the bag in a tea towel, and pound with a hammer on a hard surface to crush into small pieces (see note).
  • In a heatproof bowl, melt chocolate over simmering water, stirring occasionally until smooth. Be careful not to let the bowl touch the water. Remove from heat.
  • Prepare 2 flat trays lined with baking paper. Mix candy into chocolate, ensuring they are well combined. Spread the mixture evenly onto the trays, forming 20cm x 26cm rectangles. Chill in the refrigerator for 30 minutes or until firm.
  • Break the white chocolate bark into 15 large, irresistible pieces per tray. Enjoy!
