Easy and delicious raspberry sauce by Chef John, perfect for topping desserts like ice cream, cheesecake, and chocolate cake!
Ingredients:
  • 1.5 pounds fresh raspberries
  • 1 tablespoon water, or as needed
  • 2 teaspoons lemon juice, or more to taste
Instructions:
  • In a saucepan over medium heat, cook raspberries, sugar, water, and lemon juice until raspberries break down, sugar dissolves, and sauce is heated through, for 3 to 7 minutes, stirring occasionally.
  • Strain sauce through a fine-mesh strainer to remove seeds. Let it cool to room temperature, then cover with plastic wrap and refrigerate until chilled, approximately 45 minutes.
