Delicious coconut pudding topped with fresh raspberry sauce.
Ingredients:
  • 1 envelope (1 tablespoon) unflavored gelatin
  • 1.25 cups milk
  • 1 teaspoon vanilla extract
  • 1.3333333730698 cups flaked coconut
  • 1 (10 ounce) package frozen raspberries, thawed
  • 1 tablespoon cold water
  • 2 teaspoons cornstarch
Instructions:
  • Combine sugar, gelatin, salt, and milk in a medium saucepan over medium heat until gelatin dissolves. Remove from heat, chill until partially set. Add vanilla, then gently mix in coconut and heavy cream. Pour into a pudding mold and chill for about 4 hours until firm.
  • Prepare the raspberry sauce by combining raspberries and juice in a saucepan. Bring to a boil over medium heat. Create a slurry with water and cornstarch, then incorporate into the raspberries. Boil vigorously for one minute while stirring continuously. Allow to cool before serving alongside pudding.
