Refreshing Salmon Salad: Poached salmon mixed with celery, red onions, capers, and dill—a perfect brunch or lunch option.
Ingredients:
  • For the salmon:
  • 1 pound salmon fillet, cut in half
  • 1/2 teaspoon sea salt (for the rub)
  • 4 cups water
  • 1 1/2 teaspoons sea salt (for the poaching liquid)
  • 1 lemon slice
  • 1 teaspoon lemon juice
  • 1 teaspoon extra virgin olive oil
  • For the salad:
  • 2 celery stalks, finely chopped
  • 1/2 red onion, peeled, finely sliced
  • 1 tablespoon capers (strain out the pickling juice)
  • 1 teaspoon lemon zest
  • 3 tablespoons lemon juice
  • 1 tablespoon extra virgin olive oil
  • 2 tablespoons fresh dill, chopped
  • 1/8 teaspoon freshly ground black pepper
Instructions:
  • Season the salmon fillets generously with 1/2 teaspoon of salt, then refrigerate for 30 minutes while you prepare the remaining ingredients.
  • Prepare the dressing by mixing celery, red onion, capers, lemon zest and juice, dill, olive oil, and black pepper in a large bowl. Allow the flavors to meld together.
  • To poach the salmon, combine water, salt, and a lemon slice in a wide pot. Bring to a gentle boil, then add the salmon. Simmer for 4 minutes until cooked through.
  • Break up the salmon: Remove the just-cooked salmon from the poaching liquid and place it in a bowl. Drizzle with 1 teaspoon each of olive oil and lemon juice. Once cooled, gently break the salmon into chunks.
  • Prepare the salad by combining the salmon with celery, onions, and capers in a bowl. Gently mix everything together. Enjoy as is, or over a bed of mixed greens or butter lettuce.
