Salmon salad bursting with fresh flavors, perfect for a delightful summer meal.
Ingredients:
  • 450 g new potatoes
  • 150 g green beans
  • 4 x 200 g salmon fillets skin off, pin-boned, from sustainable sources, ask your fishmonger
  • olive oil
  • 2 lemons
  • 1 clove of garlic
  • 250 g fat-free natural yoghurt
  • 1 pinch of cayenne pepper
  • 1 bunch of watercress
  • 1 sprig of fresh mint
  • 1 sprig of fresh basil
Instructions:
  • 1. Preheat oven to 200ºC/400ºF/gas 6. Boil potatoes in salted water until tender, adding beans towards the end. Drain and cool. 2. Rub salmon with oil, lemon juice and zest, salt, and pepper. Roast for 15-20 minutes. 3. Mix grated garlic with yogurt, lemon juice, salt, pepper, and cayenne. 4. Toss potatoes and beans with salt, pepper, lemon juice, zest, and olive oil. Add watercress and herbs. 5. Break apart salmon and place on potato mix. Serve with a dollop of garlicky yogurt.
