Delicious celeriac salad pairs perfectly with smoked salmon or roast chicken.
Ingredients:
  • 1 celeriac peeled
  • 1 bunch fresh flat-leaf parsley
  • 2 anchovies finely chopped
  • 2 heaped tablespoons capers finely chopped
  • 2 heaped tablespoons small sweet and sour gherkins finely chopped
  • 5 tablespoons fat free natural yoghurt
  • 1 heaped tablespoon Dijon mustard
  • 3 tablespoons extra virgin olive oil
  • 2-3 tablespoons sherry, red or white wine vinegar
  • sea salt
  • freshly ground black pepper
Instructions:
  • Peel the celeriac, discard the skin, and continue peeling to create long ribbons. Don't worry if they break occasionally. Keep peeling until you reach the tasteless inner core, then discard it. Remove and discard the thick parsley stalks, finely slice the thinner ones, and roughly chop the leaves. Combine celeriac with parsley in a large bowl along with all other ingredients. Season to taste, adjust vinegar if needed, and serve immediately. For a delicious meal, layer the salad with smoked salmon and black pepper, or serve it with roasted chicken.
