Spicy roasted jalapeno salsa perfect for chips, tacos, and Mexican dishes.
Ingredients:
  • 4 jalapeno chile peppers
  • 5 cloves garlic, finely chopped
  • 1 onion, finely chopped
  • 1 tablespoon white sugar
  • 0.25 teaspoon ground cumin
  • 1 (10 ounce) can diced tomatoes with green chile peppers
  • 1 (28 ounce) can whole peeled tomatoes
Instructions:
  • Preheat oven to 400°F (200°C).
  • Spread the vibrant jalapeno chile peppers on a baking sheet and bake in a preheated oven for about 15 minutes until nicely roasted. Once done, take them out of the oven and delicately chop off the stems.
  • In a blender or food processor, combine jalapeno chile peppers, garlic, onion, white sugar, salt, ground cumin, and diced tomatoes with green chile peppers. Pulse briefly. Add whole peeled tomatoes and pulse again until desired consistency. Transfer to a medium bowl, cover, and chill in the refrigerator until ready to serve.
