Fresh strawberry jelly

Elevate family breakfasts with homemade strawberry jelly infused with liqueur for a gourmet twist.
Ingredients:
  • 1kg fresh ripe strawberries, hulled
  • 42.00 gm lemon juice
  • 60ml (1/4 cup) strawberry liqueur
  • 60g caster sugar
  • 15g gelatine powder
  • Thin cream, to serve
Instructions:
  • In a large heatproof bowl, layer the strawberries and cover with plastic wrap. Set the bowl over a pan of simmering water for 1 hour to extract all the juice from the strawberries.
  • Prepare a sieve lined with muslin over a bowl. Gently strain the strawberry juice through the muslin without pressing on the fruit. Let it drain for 30 minutes, then discard the fruit pulp. Combine the strawberry juice, lemon juice, and liqueur in a measuring jug, and top up with water to reach 600ml. Transfer the mixture to a saucepan over low heat and stir in the sugar until dissolved. Remove from heat once ready.
  • Soak gelatine in cold water for 5 minutes until soft, then squeeze dry. Stir into warm liquid until fully dissolved.
  • Prepare the jelly moulds by rinsing them to make it easier to unmold the jelly. Pour the jelly mixture into the moulds and allow them to cool slightly before refrigerating for 2 hours until set. Briefly dip the moulds in warm water, then flip and release the jelly. Serve with a dollop of whipped cream.
