Fresh Strawberry Tart

Create a delectable summer dessert with fresh, ripe strawberries on a homemade or store-bought crust in a tart pan for a picture-perfect treat.
Ingredients:
  • 1 (8 ounce) ball sweet pastry dough
  • 1 (8 ounce) package cream cheese, room temperature
  • 2 tablespoons crème fraîche
  • 2 tablespoons white sugar
  • 1 large egg yolk
  • 0.25 teaspoon salt
  • 0.25 teaspoon vanilla extract
  • 0.5 teaspoon grated lemon zest
  • 1 pound fresh ripe strawberries, hulled, halved
  • 0.25 cup apricot jam
  • 2 teaspoons water
Instructions:
  • Preheat your oven to a toasty 375 degrees F (190 degrees C) and elegantly line a baking sheet with parchment paper.
  • On a floured surface, roll the pastry dough into a 12-inch round disk about 1/8-inch thick, then transfer it to the baking sheet.
  • Moisten the outer 2-inch edges of the circle with water. Gently roll a small part of the dough towards the center to create a round shape with a slightly thicker edge. If some parts are thicker than others, redistribute the excess dough and shape the edges evenly. Roll the edges once more to create a thick enough crust to crimp. Crimp the crust using floured fingers.
  • Dock the bottom surface of the dough using a fork to prevent bubbling during baking.
  • Bake in the preheated oven for 20 to 25 minutes until beautifully golden brown. Allow to cool for about 10 minutes without turning off the oven.
  • In a mixing bowl, combine cream cheese, crème fraîche, sugar, egg yolk, salt, vanilla, and lemon zest until well mixed. Gently pour a thin layer of the mixture evenly into the pastry shell, using as needed.
  • Place the filled tart in the oven and bake for around 20 minutes, or until the cheese layer is set and the crust is golden brown. Allow the tart to cool completely at room temperature before topping with berries.
  • Place the berries cut side down, with the pointy end out, starting with the larger berries around the edges. As you move towards the center, you can prop the strawberries up slightly. Cut some berry halves into smaller pieces if needed to fill any gaps on the cheese layer.
  • In a saucepan, combine apricot jam and 2 teaspoons of water. Warm over low heat until it's easy to brush. Allow it to cool slightly, then generously brush over the berries and crust. Serve the tart on a plate.
