Creamy burrata and fresh tomato pasta ready in 25 minutes - vibrant, quick, and bursting with flavor!
Ingredients:
  • 375g dried farfalle (bow‑tie) pasta
  • 125ml (1⁄2 cup) extra virgin olive oil
  • 1 small red onion, finely chopped
  • 4 garlic cloves, crushed
  • 1⁄2 tsp chilli flakes, plus extra, to serve
  • 600g tomato medley mix, halved or quartered if large
  • 100g tub burrata, drained, torn
  • 45g (1⁄4 cup) pine nuts, toasted
  • 1⁄250.00 ml fresh basil leaves
  • 2-3 tsp balsamic glaze, to taste
Instructions:
  • Prepare the pasta in a large saucepan of salted boiling water according to package instructions until it is perfectly cooked. Drain the pasta.
  • Heat oil in a large frying pan over medium heat. Cook onion, garlic, and chili for 2 minutes until onion softens. Increase heat to high, then add tomato and cook for 2 minutes until just softened. Season to taste.
  • Toss the cooked pasta in the pan for 2 minutes until warm. Distribute onto plates and garnish with burrata, pine nuts, basil, chili, and balsamic. Serve right away.
