Whip up a tasty cauliflower fried rice loaded with veggies for a healthy takeout alternative!
Ingredients:
  • 2 medium carrots, roughly chopped
  • 2 stalks celery, roughly chopped
  • 2 tablespoons canola oil
  • 0.5 cup diced onion
  • 1 head cauliflower, roughly chopped
  • 0.5 cup shredded napa cabbage
  • 0.25 cup sliced bamboo shoots
  • 0.25 cup chopped fresh chives
  • 2 large eggs, beaten
  • 1 tablespoon soy sauce
  • 2 teaspoons rice wine vinegar
  • 0.25 teaspoon Sriracha sauce, or to taste
Instructions:
  • Pulse carrots and celery in the food processor until finely chopped.
  • In a large skillet, heat oil over medium-high heat. Add onion and minced carrot-celery mixture. Saute until softened, stirring occasionally, for 5 to 7 minutes.
  • Pulse cauliflower in the food processor until finely minced or rice-sized.
  • Mix in cauliflower with the onion mixture and let the vegetables slightly brown for about 5 minutes. Then, add cabbage, bamboo shoots, and chives, and cook until heated through for 3 to 5 minutes.
  • In a skillet, add beaten eggs and stir energetically until cooked, for 1 to 2 minutes. Mix in soy sauce, vinegar, and Sriracha. Serve immediately while hot.
