Celebrate Chinese New Year with delicious fried spring rolls filled with mushrooms, carrots, and pork for an auspicious and prosperous meal.
Ingredients:
  • 8 dried shiitake mushrooms
  • 1 pound pork loin or tenderloin
  • 1 tablespoon cornstarch
  • 1 1/2 teaspoons sugar
  • 1 tablespoon sesame oil
  • 1 1/2 teaspoons Shaoxing rice wine, optional
  • 4 teaspoons soy sauce
  • 1/2 medium head napa cabbage, thinly sliced (about 6 cups)
  • 3 medium carrots, julienned
  • 1/2 teaspoon kosher salt
  • 3 scallions, thinly sliced on a bias
  • 2 teaspoons minced ginger
  • 4 cups canola or vegetable oil, divided
  • 3 tablespoons oyster sauce
  • 50 to 60 (6-inch) square spring roll wrappers
  • Chinkiang vinegar or black vinegar, to serve
Instructions:
  • Set up sheet pans by the stove. Place dried mushrooms in a medium bowl, cover with hot water, and weight them down with a plate. Let soak for 30 minutes until softened. Remove, slice caps, and reserve the soaking liquid for mushroom stock.
  • Prepare the pork: Slice the pork thinly into matchsticks. Place them in a bowl and add cornstarch, sugar, sesame oil, soy sauce, and wine (optional). Gently massage the marinade into the meat. Let it sit for 10 to 15 minutes.
  • Heat 2 tablespoons of oil in a large nonstick skillet over medium-high heat. Add the pork and coat with oil. Cook until the pork turns white with some browning, about 2 minutes. Transfer the pork to a sheet pan and spread into a thin layer to cool, making room for the carrots.
  • Sauté the carrots with 1 1/2 teaspoons of oil and 1/2 teaspoon of salt in the skillet used for the pork until they just start to wilt, about 1 minute. Add them to the sheet pan with the pork to cool.
  • In the skillet with the cooked carrots, heat 1 tablespoon of oil. Add the napa cabbage and remaining 1/2 teaspoon of salt. Stir frequently and cook until the leaves wilt but the ribs are still slightly crunchy, about 1-2 minutes. Avoid overcooking to maintain a slight crunch. Transfer the cabbage to the second sheet pan, spreading it out thinly to cool.
  • Chill the filling: Combine the pork, vegetables, oyster sauce, mushrooms, scallions, and ginger on a sheet pan. Toss well to mix and spread evenly. Refrigerate for 1 hour until chilled for easier handling.
  • Prepare the egg wash by whisking together one egg with a tablespoon of water in a small bowl until fully mixed.
  • Prepare your wrapping station: Place a cutting board in front of you. Line two sheet pans with parchment paper. Transfer half of the filling to a bowl and keep the rest in the refrigerator. Cover the wrappers with plastic wrap or a damp towel. Have the egg wash, brush (or your finger), and a damp towel ready by the board.
  • Wrap the spring rolls: Place a spring roll wrapper on the board with corners at 12, 3, 6, and 9 o'clock. Spoon a heaping tablespoon of filling 2 inches above the closest corner. Shape the filling into a 3-inch log. Fold the nearest corner over the filling, pull towards you tightly. Roll tightly to the opposite corner in 1 rotation. Fold both sides over, keep parallel. Roll 2 more times. Brush egg wash on the exposed corner. Roll tightly to seal. Repeat for all wrappers. Cover with plastic or a damp towel.
  • Set up your fry station by placing a wire rack in a sheet pan or lining it with paper towels. Pour the remaining oil into a medium Dutch oven or another small wide heavy pot and attach a deep-fry thermometer to the side. Heat the oil over medium-high heat until it reaches 375°F on the thermometer.
  • Fry the spring rolls in batches in hot oil until golden brown, about 1 1/2-2 minutes per batch. Ensure all sides cook evenly by stirring occasionally. Maintain the oil temperature between 350°F and 375°F. Allow the oil to return to 375°F before frying the next batch.
