Ingredients:
  • 1 cup vegetable oil
  • 0.5 yellow onion, diced
  • 4 potatoes, peeled and sliced
  • 3 yellow squash, sliced
  • 0.25 cup butter
  • 1 teaspoon paprika
  • 1 teaspoon ground black pepper
  • 1 teaspoon minced garlic
  • 1 teaspoon salt
  • 0.5 teaspoon red pepper flakes
Instructions:
  • In a large skillet, heat vegetable oil over high heat until sizzling; reduce heat to medium. Sauté onion and potatoes in the hot oil until potatoes are golden brown and partially cooked, about 15-20 minutes, stirring occasionally.
  • Cook a mixture of squash, butter, paprika, black pepper, garlic powder, salt, and red pepper flakes until potatoes are golden brown, approximately 15 to 20 minutes, flipping occasionally. Remove from the skillet using a slotted spoon.
