Budget-friendly Frito pie: Corn chips layered with flavorful beef, beans, and melted Cheddar cheese.
Ingredients:
  • 1 pound ground beef
  • 1 small green bell pepper, chopped
  • 1 (28 ounce) can tomato sauce
  • 1 (10 ounce) can diced tomatoes with green chile peppers (such as RO*TEL®)
  • 2 (15 ounce) cans ranch-style beans
  • 1 (14.5 ounce) can stewed tomatoes
  • 0.25 cup chili powder
  • 1 cup corn chips (such as Fritos®), or to taste
  • 0.5 cup shredded Cheddar cheese, or to taste
Instructions:
  • In a sizzling skillet, brown ground beef until crumbly, about 5 to 7 minutes. Discard any excess grease, then stir in onion and green bell pepper.
  • Combine tomato sauce, diced tomatoes with green chile peppers, ranch-style beans, stewed tomatoes, and chili powder with the beef. Bring to a boil, then simmer on medium heat for 30 to 45 minutes until flavors meld together.
  • Create delicious layers in serving bowls by alternating between corn chips and the flavorful beef mixture. Finish off by generously sprinkling Cheddar cheese on top for an irresistible finishing touch.
