Indulgent Tim Tam cheesecake with a whimsical fairy floss finish for a crowd-pleasing treat.
Ingredients:
  • 200g pkt Tim Tam Dark Chocolate Classic Dark biscuits
  • 250g pkt cream cheese, at room temperature
  • 100g (1/2 cup) caster sugar
  • 300ml ctn thickened cream
  • 250g ctn mascarpone
  • Pink food colouring
  • 100g pkt red glace cherries, finely chopped
  • 2 x 15g pkt strawberry flavoured fairy floss, plus extra, to decorate
  • 125ml (1/2 cup) water
  • 20.00 gm cocoa powder, sifted
  • 100g dark chocolate, finely chopped
Instructions:
  • Grease a 7.5cm-deep loaf pan measuring 7.5 x 20cm (at the base), then line the base and sides with baking paper.
  • Pulse Tim Tams in a food processor until finely crushed. Press mixture firmly into a lined pan using the back of a spoon. Chill in the fridge.
  • Use electric beaters to whip cream cheese and sugar in a bowl until smooth. Whip cream in a separate bowl until soft peaks form. Gently combine mascarpone into the cream cheese mixture. Then, fold in the whipped cream in batches until well combined. Add food coloring for a vibrant touch. Carefully fold in cherries and quickly mix in fairy floss. Spread the mixture over the base, ensuring it is smooth. Freeze for 8 hours before serving.
  • Combine water, sugar, and cocoa in a saucepan over medium heat, stirring until smooth. Bring to a boil, then remove from heat. Stir in chocolate until well combined, then strain into a jug and let it cool.
  • Carefully release the cheesecake from the pan. Drizzle the sauce over the cheesecake and garnish with a fluffy layer of fairy floss for a whimsical touch.
