Frozen raspberry marble yoghurt bites

Satisfy your sweet cravings with these delicious frozen raspberry yoghurt bites.
Ingredients:
  • 10 medjool dates, pitted
  • 50g (1/2 cup) instant quick-cooking oats
  • 20g (1/4 cup) desiccated coconut
  • 60ml (1/4 cup) melted coconut oil
  • 200g fresh raspberries
  • 590g (2 1/4 cups) Greek-style yoghurt
  • 2 tsp white chia seeds
Instructions:
  • Cut 36 small strips of baking paper. Line 30ml mini muffin pans with paper, letting it extend up two sides for easy removal.
  • Combine dates, oats, coconut, and oil in a food processor until mixture is thoroughly blended. Firmly press a teaspoonful of the mixture into the base of each pan.
  • In a bowl, crush raspberries well. Mix in yogurt to create a marble effect. Spoon 1 tablespoon of the mixture into each pan. Tap pans to release air bubbles, then flatten. Sprinkle with chia seeds. Freeze for 4 hours until firm.
  • Quickly dip the bottom of the pans in warm water for 2-3 seconds and use the paper to lift each bite out. Transfer to an airtight container and freeze until serving.
