Indulgent French-style vanilla frozen custard from Chef John's - enjoy soft in cones or scoop into cups once frozen.
Ingredients:
  • 0.66666668653488 cup white sugar
  • 5 large egg yolks
  • 1 pinch salt
  • 2 cups heavy cream
  • 1 cup whole milk
  • 2.5 teaspoons pure vanilla extract
Instructions:
  • Whisk sugar, egg yolks, and salt until the mixture turns fluffy and transitions from dark golden to pale yellow.
  • In a heavy saucepan over medium heat, gently warm the cream and milk while stirring occasionally to prevent sticking. Heat until the mixture just begins to simmer with small bubbles appearing on the surface, about 5 to 8 minutes. Remove from heat.
  • Gradually incorporate hot cream into egg yolk mixture while whisking to prevent eggs from cooking. Continue whisking in remaining cream mixture. Stir in vanilla extract and let cool for 30-45 minutes. For faster cooling, place the bowl in a larger bowl filled with ice water.
  • Transfer the chilled mixture into a pitcher, cover it, and let it refrigerate until completely cold, for at least 4 hours or overnight.
  • Transfer the cold custard mixture into an ice cream maker and churn until it resembles soft ice cream, approximately 20 minutes. Once done, promptly transfer the ice cream into a plastic container and cover the surface with plastic wrap. Seal the container tightly and let it freeze until it reaches a scoopable consistency, which takes around 3 hours.
