Frozen Watermelon Rosemary Margaritas: Refreshing cocktail for summer gatherings.
Ingredients:
  • 1 cup water
  • 0.33 cup white sugar
  • 1.5 teaspoons chopped fresh rosemary
  • 6 cups cubed seeded watermelon
  • 1 cup lemon juice
  • 1 tablespoon kosher salt
  • 1 tablespoon white sugar
  • 8 fluid ounces reposado tequila
  • rosemary sprigs for serving
  • watermelon wedges for serving
Instructions:
  • In a small saucepan, combine 1 cup water and 1/3 cup sugar. Bring to a boil, stirring occasionally until sugar is dissolved. Add chopped rosemary and steep for 1 hour.
  • Pour the fragrant rosemary syrup into a blender followed by juicy watermelon and fresh lemon juice. Blend until velvety smooth for about 30 seconds. Strain the luscious lemonade blend and freeze in ice cube trays until firm for 8 hours or overnight.
  • Combine salt and the remaining tablespoon of sugar in a small shallow dish. Gently moisten the rims of 4 (12-ounce) glasses with a wet paper towel, then roll the glass rims in the salt-sugar mixture until fully coated.
  • In batches, blend half of the frozen watermelon-lemonade cubes and 4 ounces of tequila in a blender or food processor until slushy. Add 1 to 2 tablespoons of water if needed. Pour into glasses. Repeat with remaining watermelon-lemonade cubes and tequila. Garnish with rosemary sprigs and watermelon wedges before serving.
