Frozen Yogurt Brunch Bundt

Impress your brunch guests with a refreshing frozen yogurt Bundt cake packed with fruity flavors - a unique twist on the classic yogurt, granola, and fruit combo!
Ingredients:
  • 2 cups assorted berries (I used blueberries, strawberries, raspberries and blackberries)
  • 1/4 cup water
  • 3 tablespoons sugar
  • Juice from half a lemon
  • 5 containers (5.3 oz each) Greek vanilla yogurt
  • 1 cup granola
  • Fresh mint and additional berries, if desired
Instructions:
  • Place 2 cups of fresh berries, water, sugar, and lemon juice in a food processor. Blend until smooth. Strain the mixture if desired, or leave it as is for a chunkier texture.
  • In a medium bowl, whisk together the fruit mixture and yogurt until smooth. Spread half of the mixture into a nonstick fluted tube cake pan. Sprinkle with granola and top with the remaining mixture. Freeze for 8 hours. For a decorative touch, freeze some of the mixture in small nonstick molds.
  • Garnish with fresh mint leaves and extra berries before serving.
