Fruit 'n' nut chocolate fridge cake

Simple and scrumptious fridge cake with nuts and raisins.
Ingredients:
  • 200g chocolate-chip biscuits, chopped into 2cm pieces
  • 125.00 ml pistachio kernels, toasted, chopped
  • 82.50 ml hazelnuts, toasted, chopped
  • 82.50 ml macadamias, toasted, chopped
  • 125.00 ml raisins, chopped
  • 300g milk chocolate, chopped
  • 241.88 gm sweetened condensed milk
  • 50g butter, chopped
  • Cocoa powder, for dusting
Instructions:
  • Prepare a loaf pan by greasing it generously. Line the base and sides with baking paper, leaving a 2cm overhang on the long ends. In a bowl, mix together biscuits, pistachios, hazelnuts, macadamia nuts, and raisins.
  • Combine chocolate, condensed milk, and butter in a saucepan over low heat, stirring until smooth for 3 to 4 minutes. Stir in the chocolate mixture with the biscuit mixture until well combined.
  • Press the mixture into the pan firmly to prevent air bubbles and use a spatula to create a smooth surface. Cover and chill for 2 hours until set. Invert onto a plate, remove the paper, dust with cocoa, slice, and serve.
