Sweet tamales ‘n’ chocolate

Sweet or savory Mexican tamales are delightful little packages of joy.
Ingredients:
  • 200 g fine cornmeal
  • 1 heaped tablespoon plain flour
  • ½ teaspoon baking powder
  • 50 g golden caster sugar
  • 50 g unsweetened desiccated coconut
  • ½ pineapple approximately 150g, peeled, core removed, halved and really finely diced
  • 1 lime zest and juice of
  • 200 ml single cream
  • 100 g good-quality dark chocolate (70% cocoa solids) broken into small pieces
  • 1 tablespoon unsalted butter cubed
Instructions:
  • Soak corn husks in warm water or prepare 16 pieces of greaseproof paper. Mix cornmeal, flour, salt, baking powder, sugar, coconut, pineapple, lime zest, lime juice, and water until you have a thick paste. Spoon pineapple mixture onto a husk/paper, fold sides to cover, twist ends, and tie with string. Steam tamales in a colander for 20-25 minutes. Make chocolate sauce by boiling cream, melting chocolate, adding butter and salt. Serve tamales with warm chocolate sauce.
