Indulgent sweet pineapple tamales infused with butter and shortening for a mouthwatering experience.
Ingredients:
  • corn husks
  • 2 pounds fresh corn masa dough
  • 2 tablespoons warm water, or as needed
  • 1 cup unsalted butter, at room temperature
  • 1 cup vegetable shortening, at room temperature
  • 1 cup white sugar
  • 1 (20 ounce) can pineapple, drained and finely chopped
Instructions:
  • Soak corn husks in a bowl of boiling water for 30 to 60 minutes. Drain and place on a work surface, then cover with a clean, damp towel.
  • Combine masa dough, baking soda, and water in a bowl and knead until the dough is smooth and consistent. Add water, 1 teaspoon at a time, as needed, making sure not to overdo it.
  • Using an electric mixer, beat together butter, vegetable shortening, and sugar until smooth and creamy. Gradually add masa dough and knead until mixture is uniform. Stir in chopped pineapple.
  • Spread a generous tablespoon of masa mixture onto a corn husk, then fold the husk around the filling, sealing it into a neat little package. Repeat with the remaining husks.
  • Set up a steamer in a saucepan with water just below the steamer. Bring to a boil, then lower the heat to medium low. Arrange tamales open side up, cover, and cook for about 1 hour until filling is warm and easily separates from the husk.
