Indulgent Mexican dessert tamales are filled with sweet oranges, almonds, and raisins. Opt for ripe, juicy oranges for maximum flavor.
Ingredients:
  • corn husks
  • 5 large oranges, peeled and segmented
  • 2.5 cups white sugar, divided
  • 2 cups lard
  • 2 ice cubes, or as needed
  • 3.25 pounds fresh corn masa dough
  • 2 tablespoons baking powder
  • 1 cup freshly squeezed orange juice
  • 0.66666668653488 cup raisins
  • 0.33333334326744 cup chopped blanched almonds
Instructions:
  • Place the corn husks in a bowl and cover them with boiling water to soak for 30 to 60 minutes. Drain the husks, lay them on a work surface, and cover them with a clean, damp towel.
  • In a saucepan over low heat, simmer oranges and 1 1/4 cups sugar until it transforms into jam-like consistency, approximately 30 minutes. Allow the mixture to cool completely before using.
  • Allow the jam to cool, then combine lard with 2 or 3 ice cubes in a large bowl. Use an electric mixer to beat until smooth and creamy before adding 1 1/4 cups of sugar and mixing until fully incorporated.
  • In a separate bowl, mix masa dough and baking powder. Knead the mixture for a few minutes. Add this masa mixture to the lard, alternating with milk and orange juice while beating with an electric mixer. Finally, stir in the cooled jam, raisins, and almonds.
  • Choose a wide corn husk or two small ones. Spread 2 tablespoons of masa mixture onto the husk, filling it 2 inches from the bottom and 1/4 inch from the top. Fold the sides of the husk over each other and then fold the bottom over the seam. Repeat with the remaining husks.
  • Prepare a steamer by filling a saucepan with water just below the level of the steamer insert. Bring the water to a boil. Arrange tamales open-side up in the steamer and steam for about 1 hour, or until the filling is warm and comes away from the husk. Allow the tamales to rest for 15 minutes before serving.
