Sweet Orange Baked Chicken

Delightful orange-infused rice and chicken dinner.
Ingredients:
  • 1 box (6.2 oz) fast-cooking long-grain and wild rice mix (with seasoning packet)
  • 1/2 cup sliced almonds, toasted
  • 2 tablespoons butter or margarine
  • 8 boneless skinless chicken breasts (3 lb)
  • 1/2 teaspoon salt
  • 1 cup orange marmalade
  • 1/4 cup honey
  • 2 tablespoons Dijon mustard
  • 2 teaspoons chopped fresh thyme leaves
Instructions:
  • Preheat oven to 425°F. Prepare rice according to package instructions, without adding butter. Mix in almonds and butter.
  • Prepare the 15x10x1-inch pan by greasing it with cooking spray. Make a slit in each chicken breast to create a pocket. Fill each pocket with approximately 1/4 cup of rice mixture. Arrange the chicken in the pan and evenly sprinkle salt over the top.
  • Combine marmalade, honey, mustard, and thyme in a small bowl until well mixed. Set aside 1/2 cup of the mixture for serving. Brush the rest over the chicken.
  • Bake until chicken juices run clear when thickest part is cut, about 35-40 minutes or until internal temperature reaches 165°F.
  • Warm up the marmalade mixture and drizzle it evenly over the chicken.
