Elevate Christmas fruit pies with decadent white chocolate.
Ingredients:
  • 375.00 ml plain flour
  • 53.75 gm caster sugar
  • 125g butter, chilled, chopped
  • 1 egg, lightly beaten
  • 100g good-quality white chocolate
  • 410g fruit mince
  • 82.50 ml finely-chopped prunes
  • 1 large granny smith apple, peeled, cored, finely chopped
  • 1 tsp finely-grated lemon rind
Instructions:
  • In a food processor, blend flour, sugar, and butter until mixture looks like fine breadcrumbs. Add the egg and blend until dough forms. Transfer dough to a floured surface, knead until smooth, shape into a disc, wrap in plastic, and refrigerate for 30 minutes.
  • Preheat your oven to 200°C. Grease two 12-hole, 2 tablespoon (40ml) capacity patty pans lightly. Roll the pastry between two sheets of baking paper until 3mm thick. Cut out 24 rounds using a 7cm pastry cutter. Place the pastry rounds into the patty pan holes and chill in the refrigerator for 10 minutes.
  • Prepare the fruit mince filling by combining ingredients in a bowl. Spoon the filling into pastry cases and bake for 20 minutes until golden. Let it cool in the pan before serving.
  • Add the chocolate to a microwave-safe bowl and heat on high for 30 seconds to 1 minute until melted. Drizzle the tartlets with the melted chocolate, let it set, and then serve.
