Get ready to spread some Christmas cheer with delicious holiday baking.
Ingredients:
  • 312.50 ml plain flour
  • 4.00 gm baking powder
  • 20.00 gm custard powder
  • 37.50 gm icing sugar
  • 80g butter, cubed
  • 1 egg, separated
  • 1 to 20.00 gm chilled water
  • 410g jar fruit mince
  • 18.00 gm white sugar
Instructions:
  • In a food processor, combine flour, baking powder, custard powder, and 2 tablespoons of icing sugar. Pulse for 30 seconds until fully mixed. Add butter and pulse until mixture becomes fine crumbs. Then, add egg yolk and 1 tablespoon of water. Pulse until pastry forms, adding more water if needed.
  • Transfer the pastry to a lightly floured surface and knead it until smooth. Wrap it in greaseproof paper and refrigerate for 20 minutes, or until it becomes firm.
  • Preheat your oven to 160°C. Lightly grease 24 patty pan holes (40ml each). Roll out pastry to 4mm thickness between two sheets of baking paper. Cut out 24 circles with a 7cm fluted round cutter and gently press them into the holes. Reform leftover pastry, roll it out, and cut out 24 stars using a 4cm star-shaped cutter.
  • Spoon a generous amount of fruit mince into each pastry shell. Brush pastry stars with egg white, sprinkle with sugar, then arrange them on top of the mince. Bake for 15-20 minutes until pastry is golden. Let cool in the pans for 10 minutes, then transfer to a wire rack to cool completely. Dust with remaining icing sugar.
