Fruit-mince tarts

Get in the holiday spirit with these festive fruit mince tarts.
Ingredients:
  • 300g (2 cups) plain flour
  • 40g (1/3 cup) almond meal
  • 60g (1/3 cup) icing sugar mixture
  • 200g chilled butter, cubed
  • 1 egg yolk
  • 20.00 gm cold water
  • Plain flour, to dust
  • Icing sugar, to dust
  • 555g (3 cups) dried mixed fruit
  • 80ml (1/3 cup) brandy
  • 80ml (1/3 cup) golden syrup
  • 80ml (1/3 cup) light corn syrup
  • 2.50 gm mixed spice
  • Pinch of ground cloves
Instructions:
  • In a food processor, combine flour, almond meal, and icing sugar until mixed. Add butter and pulse until mixture looks like fine breadcrumbs. Mix in egg yolk and water until just combined. Transfer mixture to a floured surface and knead until smooth. Shape into a disc, wrap in plastic, and refrigerate for 30 minutes.
  • In a saucepan over low heat, combine dried fruit, brandy, golden syrup, corn syrup, mixed spice, and cloves. Increase heat to medium-high and bring to a boil. Reduce heat to medium and simmer, stirring, until mixture thickens, about 10 minutes. Remove from heat.
  • Preheat the oven to 190°C. Roll out the pastry to a 3mm thickness using a floured rolling pin. Cut out 24 discs using a 7cm-diameter round pastry cutter. Place the pastry discs into twenty-four 40ml (2-tablespoons) patty pans.
  • Roll out the leftover pastry until it is 3mm thick. Cut 12 stars with a 4cm-diameter star-shaped cutter and 12 hearts with a 4cm-diameter heart-shaped cutter. Fill the pastry cases with the filling and place a star or heart on top. Bake in the oven for 20 minutes or until golden. Let them sit in the pans for 5 minutes after removing from the oven, then transfer to a wire rack to cool. Dust with icing sugar before serving.
