Get festive with these adorable fruit mince tarts, perfect for baking with kids and gifting during the holiday season.
Ingredients:
  • 225g plain flour
  • 75g (1/2 cup) self-raising flour
  • 49.50 gm icing sugar, plus extra to dust
  • 150g unsalted butter, chilled
  • 1 egg yolk
  • 410g jar fruit mince
Instructions:
  • Combine flours, icing sugar, and a pinch of salt in a food processor. Add cubed butter and pulse until mixture resembles fine breadcrumbs. Add egg yolk and two tablespoons cold water, then pulse until dough forms a smooth ball (add more water, 1/2 tablespoon at a time, if needed). Wrap pastry in plastic wrap and chill in the fridge for 30 minutes.
  • Preheat your oven to 180°C and generously grease a 24-hole patty pan.
  • Roll out the pastry on a lightly floured surface, cut out 7cm circles, and press them into the base of the pans. Fill each with the fruit mince. Cut out pastry lids using a 5-6cm cutter.
  • Moisten the underside with water and press firmly onto the base, ensuring the edges are tightly sealed. Use a fork to create four small vents on the top of each tart to release steam. Bake for 20-25 minutes until the pastry is golden and fully cooked.
  • Allow the delicious creation to cool briefly, then move it to a wire rack for complete cooling. Sprinkle with a dusting of icing sugar before beautifully packaging it up.
