Celebrate summer Down Under with a vibrant and refreshing fruit platter showcasing the best of the season's bounty.
Ingredients:
  • 500g Greek Style Yoghurt
  • 2 passionfruit, halved
  • 24.00 gm pure icing sugar, sifted
  • 4 just-ripe white peaches or nectarines, stoned, cut into wedges
  • 500g strawberries, washed
  • 250g cherries, washed
  • 250g fresh lychees, peeled
  • 1/2 small seedless watermelon, peeled, thinly sliced
  • 1/2 ripe pineapple, peeled, thinly sliced
Instructions:
  • Whisk together the yoghurt, passionfruit pulp, and icing sugar until smooth. Cover the bowl with plastic wrap and chill in the refrigerator.
  • Create a beautiful display on a platter with peaches, strawberries, cherries, lychees, watermelon, and pineapple. Accompany with a side of delicious passionfruit yogurt.
