Indulge in festive fruitcake granola, a delightful Christmas treat packed with oats and nuts.
Ingredients:
  • 4 cups old-fashioned oats
  • 1 cup chopped walnuts
  • 1/2 cup packed brown sugar
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/3 cup vegetable oil
  • 1/4 cup honey
  • 2 tablespoons granulated sugar
  • 1 tablespoon spiced rum or 1/2 teaspoon rum extract
  • 1 cup dried fruit bits
  • 1/2 cup diced dried pineapple
  • 1/4 cup diced candied orange peel
  • 1/4 cup diced candied lemon peel
Instructions:
  • Preheat the oven to 300°F. Combine oats, walnuts, brown sugar, cinnamon, nutmeg, and salt in a large bowl; set aside.
  • In a 1-quart saucepan, gently warm oil, honey, and granulated sugar until the sugar dissolves, stirring constantly. Take the saucepan off the heat and mix in the rum. Pour this warm mixture over the oats, stirring until everything is combined. Spread the mixture in an ungreased 15x10x1-inch pan.
  • Bake for 30 minutes, stirring occasionally, until golden brown. Allow to cool completely in the pan on a cooling rack for about 30 minutes.
  • Mix the granola to create a delightful crunch. Add in the fruity goodness of fruit bits, pineapple, orange peel, and lemon peel. Store in an airtight container to keep it fresh.
