Fruitcake-inspired cupcakes topped with rum frosting, a delightful holiday treat.
Ingredients:
  • 2 3/4 cups Gold Medal™ all-purpose flour
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3/4 cup shortening
  • 1 2/3 cups granulated sugar
  • 5 egg whites
  • 2 teaspoons vanilla
  • 2 teaspoons rum extract
  • 1 1/4 cups milk
  • 1/2 cup finely chopped dried apricots
  • 1/2 cup finely chopped sweetened dried pineapple
  • 1/2 cup sweetened dried cherries or cranberries
  • 1/2 cup chopped pecans
  • 6 cups powdered sugar
  • 2/3 cup butter or margarine, softened
  • 1 tablespoon dark rum or 1 teaspoon rum extract
  • 3 to 4 tablespoons milk
  • Additional dried apricots, pineapple, cherries or cranberries
  • Additional pecans
Instructions:
  • Preheat the oven to 350°F and line 28 regular-size muffin cups with paper baking cups. In a medium bowl, combine flour, baking powder, and salt; set aside.
  • In a large bowl, cream shortening with an electric mixer for 30 seconds. Gradually add granulated sugar, beating after each addition. Beat for 2 more minutes. Add egg whites one at a time and mix well. Incorporate vanilla and rum extract. On low speed, add flour mixture and milk alternately until just blended. Fold in dried fruit and pecans.
  • Spoon the batter into muffin cups, distributing it evenly, filling each about two-thirds full with approximately 3 tablespoons of batter.
  • Bake for 18 to 22 minutes, or until a toothpick inserted in the center comes out clean. Let cool for 5 minutes, then remove cupcakes from pans and transfer to cooling racks. Allow to cool completely, for about 30 minutes.
  • Combine powdered sugar and butter in a large bowl using a spoon or electric mixer on low speed. Add rum and 3 tablespoons of milk. Slowly mix in additional milk, 1 teaspoon at a time, until frosting is smooth and spreadable. Frost cupcakes and garnish with dried fruit and pecans.
