Holiday fruit salad with tangy pineapple, walnuts, and whipped cream - a must for festive feasts.
Ingredients:
  • 1 (12 ounce) package fresh or frozen cranberries, coarsely chopped
  • 1 (20 ounce) can crushed pineapple, with juice
  • 0.5 pint heavy whipping cream
  • 1 cup chopped walnuts
  • 2 cups miniature marshmallows
Instructions:
  • Combine cranberries, pineapple (with juice), and sugar in a large bowl. Allow the mixture to sit for an hour to dissolve the sugar. Strain the mixture over a bowl and refrigerate covered for at least two hours or overnight. Enjoy the leftover drippings as a delicious cranberry punch when mixed with lemon-lime soda.
  • Whip cream until soft peaks form. Sweeten with sugar if desired. In a large bowl, combine cranberry mixture, walnuts, and marshmallows. Gently fold in whipped cream. Chill in refrigerator until ready to serve.
