So-Simple Cranberry Gelatin Salad

Whip up an elegant holiday side dish with minimal ingredients.
Ingredients:
  • 2 cups boiling water
  • 2 boxes (4-serving size each) Jell-O™ lemon-flavored gelatin
  • 2 tubs (10 oz each) frozen cranberry-orange sauce, thawed
  • 1 cup fresh raspberries
Instructions:
  • Gently coat a 6 1/2-cup ring mold or 1 1/2-quart decorative bowl with vegetable oil.
  • In a large bowl, dissolve gelatin in boiling water. Mix in cranberry-orange sauce and gently fold in raspberries. Transfer the mixture to a mold or bowl, cover, and refrigerate for at least 6 hours but not more than 24 hours.
  • Unmold the salad by dipping the mold in hot water for 10 seconds. Invert a serving plate on top of the mold, flip it over, and remove the mold. Chill the salad until ready to serve. If using a decorative bowl, simply scoop the salad to serve without unmolding.
