Holiday cranberry salad: Tangy cranberries, crunchy nuts, sweet fruit, and wobbly gelatin create a perfect side dish.
Ingredients:
  • 2 cups cranberries
  • 1 large orange, cut into small pieces
  • 1 cup white sugar
  • 1 cup chopped celery
  • 1 cup finely chopped walnuts
  • 1 cup crushed pineapple, drained
  • 1 (3 ounce) package raspberry flavored Jell-O® mix
  • 2 cups hot water
Instructions:
  • Combine cranberries, whole orange (with rind), and sugar in a food processor. Pulse until cranberries and orange are coarsely chopped and blended with sugar. Transfer mixture to a bowl and mix in celery, walnuts, and pineapple until evenly combined.
  • In a bowl, combine gelatin and hot water immediately, whisk until dissolved. Pour the gelatin over the cranberry mixture and stir to combine.
  • Transfer the mixture to a mold of your choice and refrigerate until ready to serve.
