Delight in a vibrant cranberry, cherry, and pineapple salad – a perfect side dish.
Ingredients:
  • 1 package (8 oz) cream cheese, softened
  • 1 can (14 oz) sweetened condensed milk (not evaporated)
  • 1/4 cup mayonnaise
  • 2 tablespoons lemon juice
  • 1 can (16 oz) jellied cranberry sauce
  • 1 bag (16 oz) frozen dark sweet cherries
  • 1 can (20 oz) crushed pineapple, drained
  • 2 tablespoons chopped nuts
Instructions:
  • Combine cream cheese, condensed milk, mayonnaise, and lemon juice in a large bowl. Use an electric mixer on low speed to beat until smooth and fluffy.
  • Mix in the cranberry sauce, beating on low until fully blended. Gently fold in the cherries and pineapple. Spread the mixture evenly into an ungreased 13x9-inch (3-quart) glass baking dish, then sprinkle with nuts. Cover and freeze for 6 hours or until firm.
  • Allow the dish to come to room temperature for 30 minutes or until it softens slightly. Then, cut it into squares before serving.
