Try a frozen twist on classic French Silk Pie - a cool and creamy treat ready to satisfy your cravings straight from the freezer.
Ingredients:
  • 2 tablespoons cornstarch
  • 3/4 cup butter or margarine, softened
  • 1/3 cup sugar
  • 1/4 cup unsweetened baking cocoa
  • 1 1/4 cups Gold Medal™ all-purpose flour
  • 1/4 cup finely chopped nuts
  • 1/4 cup butter or margarine
  • 3 oz unsweetened baking chocolate
  • 1 cup sugar
  • 1 cup whipping cream
  • Whipped cream
  • Sliced almonds, toasted
Instructions:
  • Preheat oven to 325°F. In a large bowl, cream 3/4 cup butter and 1/3 cup sugar with an electric mixer for 1 minute. Add cocoa and flour, mix until crumbly. Press mixture firmly into a 9 1/2-inch deep-dish or 10-inch regular glass pie plate. Sprinkle with chopped nuts. Bake for 20 to 25 minutes until the edge looks dry. Let it cool completely for about 45 minutes.
  • In a 2-quart saucepan, gently melt 1/4 cup of butter with the chocolate on low heat, stirring occasionally. Once melted, remove from heat. In a small bowl, whisk together 1 cup of sugar and cornstarch, then stir it into the chocolate mixture.
  • Whisk eggs in a small bowl with an electric mixer until thick and lemon colored, then fold into the chocolate mixture. Cook over medium heat for 5 minutes, stirring constantly, until thick and glossy. Add vanilla and let cool for 10 minutes, stirring occasionally.
  • In a medium bowl, whip the cream with an electric mixer until stiff peaks form. Gently fold in the chocolate mixture. Pour the mixture over the crust and freeze for about 4 hours until firm. Before cutting, let it sit at room temperature for 30 minutes. Serve with a dollop of whipped cream and a sprinkle of almonds. Store covered in the freezer.
