Tangy cranberry pineapple salad with orange zest, citrus juices, pineapple, and celery - a vibrant and refreshing treat.
Ingredients:
  • 2 (3 ounce) packages raspberry flavored Jell-O® mix
  • 1 (16 ounce) can whole cranberry sauce
  • 0.5 teaspoon orange zest
  • 0.33333334326744 cup orange juice
  • 2 tablespoons lemon juice
  • 1 (20 ounce) can pineapple tidbits, drained
  • 0.75 cup sliced celery
Instructions:
  • Save the pineapple syrup and add water to make 1 cup total liquid.
  • In a saucepan, heat pineapple juice over medium heat until boiling. Add gelatin and stir until dissolved. Remove from heat, then mix in cranberry sauce, orange peel, orange juice, and lemon juice. Blend well and let cool until slightly thickened.
  • Combine the pineapple and celery, then transfer the mixture into a mold or an 8-inch square pan. Refrigerate until it is set, which usually takes about 2 hours.
