20-Min Sweet and Tangy Fruit & Almond Rice Salad: Refreshing & Delicious!
Ingredients:
  • 3 tablespoons orange marmalade
  • 1 tablespoon soy sauce
  • 1/4 teaspoon ground ginger
  • 3 cups cold cooked white rice
  • 1 cup seedless red grapes
  • 2 medium oranges, peeled and chopped
  • 2 small kiwifruit, peeled and sliced
  • Lettuce leaves
  • 1/3 cup slivered almonds, toasted
Instructions:
  • Combine the marmalade, soy sauce, and ginger in a large bowl.
  • Toss all remaining ingredients, excluding lettuce and almonds. Serve over a bed of lettuce and sprinkle with almonds.
