Whip up vibrant fruit skewers for a quick and delightful dessert.
Ingredients:
  • 4 stems lemon grass
  • 2 kiwifruit, peeled, each cut into 8 pieces
  • 4 freestone peaches, quartered, stones removed
  • 8 strawberries, washed, hulled, halved
  • 32.00 gm brown sugar
  • 10.40 gm shredded coconut
  • Vanilla yoghurt, to serve
Instructions:
  • Cut the lemon-grass stems into 20cm lengths, then halve them lengthways. Remove the tough outer layers and trim one end of each stem to a point for easier fruit skewering.
  • Skewer the kiwifruit, peach, and strawberry in an alternating pattern.
  • Preheat the grill on high. Arrange skewers on a baking tray in a single layer. Sprinkle with brown sugar and coconut. Grill for 30 seconds until the sugar caramelizes and the coconut is toasted. Serve with vanilla yoghurt while hot.
