Tropical papaya and coconut dessert with citrus-infused syrup.
Ingredients:
  • 250ml (1 cup) water
  • 100g (1/2 cup) caster sugar
  • 2 stems lemon grass, pale section only, bruised, halved lengthways
  • 1 lime
  • 2 red papayas, peeled, seeded, cut into wedges
  • Coconut cream, to serve
Instructions:
  • Combine water and sugar in a small saucepan over gentle heat, stirring until sugar dissolves. Introduce lemon grass and bring it to a gentle boil for 5 minutes until slightly thickened. Let it rest for 1 hour to enhance the flavors, then remove and discard the lemon grass.
  • Zest the lime using a zester or vegetable peeler and small sharp knife, then stir the strips into the syrup.
  • Spoon the papaya into individual serving dishes. Pour over the sugar syrup and coconut cream for a delightful finish.
