Try these flavorful and easy-to-make spicy chicken skewers - the perfect sweet, spicy, salty, and sour dish for your next barbecue favorite.
Ingredients:
  • 400ml can coconut milk, plus extra, to serve
  • 56.00 gm green curry paste
  • 500g chicken thigh fillets, trimmed, cut into strips
  • 1⁄2 ripe red papaya, deseeded, peeled, sliced
  • 1⁄2 red onion, cut into thin wedges
  • 1⁄250.00 ml fresh coriander leaves, plus extra leaves, to serve
  • 1 lime, juiced
Instructions:
  • In a glass or ceramic bowl, mix coconut milk and curry paste. Pierce the chicken all over using a fork, then add it to the coconut mixture and coat it well. Cover with plastic wrap and refrigerate for at least 1 hour, or ideally overnight, to marinate.
  • Skewer the marinated chicken strips on metal or pre-soaked bamboo skewers, then dispose of the marinade.
  • Preheat a sizzling grill until hot. Grill the chicken skewers for 3-4 minutes on each side until fully cooked. Plate and season to perfection.
  • In a bowl, mix together papaya, onion, coriander, and lime juice. Season to taste. Serve the mixture on plates and place the chicken skewers on top. Drizzle with extra coconut milk, sprinkle with more coriander, and serve with lime wedges.
