Grilled Lemongrass Ginger Chicken Skewers - Succulent chicken marinated in fragrant, spicy paste.
Ingredients:
  • 1 shallot, minced
  • 2 stalks lemongrass, peeled and chopped
  • 1 Thai bird's eye chile pepper, seeded and chopped
  • 1 clove garlic, chopped
  • 1 teaspoon grated ginger
  • 1 tablespoon fish sauce
  • 1 tablespoon vegetable oil
  • 1 tablespoon white sugar
  • 1.5 teaspoons oyster sauce
  • 1 pound skinless, boneless chicken breasts, cut into thin strips

Instructions:
  • Combine shallot, lemongrass, chile pepper, garlic, and ginger in a mortar and pestle and pound into a flavorful paste. Stir in fish sauce, vegetable oil, sugar, and oyster sauce.
  • In a large resealable plastic bag, combine chicken strips with the paste. Seal the bag and refrigerate for at least 1 hour to marinate.
  • Prepare the grill by preheating it to medium-high heat and lightly oiling the grate.
  • Skewer marinated chicken and grill until golden brown on each side, 2 to 4 minutes.
