Flavorful Asian skewers bursting with tangy deliciousness.
Ingredients:
  • 8 lemongrass stems
  • 1kg beef sirloin steak, cut into 3cm cubes
  • 18.20 gm peanut oil
  • 2 tsp finely chopped ginger
  • 50g brown sugar
  • 60ml soy sauce
  • 600g choy sum
  • Steamed white rice, to serve
Instructions:
  • Cut each lemongrass stem in half. Use a wooden or metal skewer to pierce the center of each beef cube. Skewer the meat onto the shorter lemongrass pieces.
  • Mince one of the remaining lemongrass pieces and store the rest in the freezer in a plastic bag for later use.
  • In a small saucepan over medium heat, warm the oil and sauté the garlic, ginger, and chopped lemongrass.
  • Sauté until aromatic, approximately 1 minute.
  • Incorporate the sugar and cook until it dissolves completely. Pour in the soy sauce, bring it to a boil, and then turn off the heat. Gently cover the beef skewers with 3 tablespoons of the sauce (save the rest for the choy sum).
  • Preheat a chargrill or barbecue until it's nice and hot.
  • Sear beef skewers in batches until all sides are golden brown, cooking for about 5 minutes for rare or to your desired doneness.
  • Cook the choy sum in a large pan of boiling water for 45 seconds until tender. Drain and mix with the rest of the sauce. Serve by placing steamed rice on each plate and topping with 2 beef skewers and vegetables.
