Steak Salad with Creamy Dressing

Delicious grilled beef steak layered with fresh veggies on crisp lettuce for a quick and satisfying dinner. Ready in just 25 minutes!
Ingredients:
  • 2 beef tenderloin steaks, about 3/4 to 1 inch thick (6 oz each), trimmed of fat
  • 1/4 teaspoon salt
  • 1/2 teaspoon freshly ground pepper
  • 1 package (6.5 oz) sweet butter lettuce blend
  • 1 cup cherry tomatoes, cut in half
  • 1/2 cup thinly sliced English (seedless) cucumber
  • 3/4 cup fat-free sour cream
  • 1/4 cup chopped red onion
  • 2 teaspoons chopped fresh chives
  • 2 1/2 teaspoons prepared horseradish
  • 1/2 teaspoon fresh lemon juice
Instructions:
  • Preheat your gas or charcoal grill. Season steaks with salt and 1/4 teaspoon of pepper. Brush the grill rack with oil. Grill steaks over medium-high heat, turning once, for about 10 minutes until cooked to your liking. Remove steaks from the grill, loosely cover, and let them rest for 10 minutes before serving.
  • Combine lettuce, tomatoes, and cucumber in a large bowl and divide the salad among 4 plates. In a small bowl, whisk together sour cream, onion, chives, horseradish, lemon juice, and remaining 1/4 teaspoon of pepper until well blended. Serve the dressing alongside the salad plates.
  • Slice the steaks thinly across the grain and lay them over the salads. Drizzle dressing on top.
