Get ready for mouthwatering lemongrass chicken skewers grilled to perfection.
Ingredients:
  • 40.00 ml lemongrass paste
  • 8.00 gm brown sugar
  • 3 garlic cloves, chopped
  • 20.00 ml chopped fresh coriander root and stem
  • 3 makrut lime leaves, vein removed, chopped
  • 1 green onion, chopped
  • 57.50 gm grapeseed oil
  • 1kg chicken thigh fillets, trimmed, cut into 3cm cubes
  • Lime wedges, to serve
Instructions:
  • In a food processor, combine lemongrass paste, sugar, garlic, fish sauce, coriander root and stem, lime leaves, and onion. Pulse until finely chopped. Then add oil and pulse again until well combined.
  • Skewer chicken pieces evenly and place them in a ceramic baking dish. Pour marinade over the chicken, ensuring it's well coated. Cover with plastic wrap and refrigerate for 2 hours, if possible.
  • Heat up the barbecue plate or chargrill over medium-high heat. Grill the skewers in batches, turning occasionally, for 10 to 12 minutes until the chicken is cooked through and lightly charred. Serve with rice and lime wedges.
