Cracked wheat and chicken lemon grass skewers

Colorful chicken skewers, ideal for any occasion.
Ingredients:
  • 250.00 ml burghul (cracked wheat)
  • 187.50 gm boiling water
  • 600g chicken mince
  • 60.00 ml chopped fresh coriander
  • 1 red chilli, deseeded, chopped
  • 15cm long lemon grass stem or a skewer
  • 18.20 gm peanut oil
  • Steamed white rice, to serve
  • Toasted sesame seeds, to serve
  • Sweet chilli sauce, to serve
Instructions:
  • Place 1 cup of burghul (cracked wheat) in a heatproof bowl and pour 3/4 cup of boiling water over it. Allow it to sit while mixing together 600g chicken mince, 3 tablespoons of chopped fresh coriander, and 1 deseeded and chopped red chilli.
  • Divide the mixture into 12 equal portions, coat with cracked wheat, and shape each portion around a 15cm lemongrass stem or bamboo skewer to form kebabs.
  • In a frying pan, cook the skewers in 1 tablespoon of peanut oil for 10 minutes until they are fully cooked. Combine steamed rice with toasted sesame seeds. Serve the skewers with sweet chili sauce on the side.
