Ingredients:
  • 170g (1 cup) burghul (cracked wheat)
  • Olive oil spray
  • 2 (200g each) lamb eye of loin (backstraps)
  • 200g green round beans, topped, cut into 3cm lengths
  • 500.00 ml watercress sprigs
  • 1 small avocado, halved, stone removed, peeled, coarsely chopped
  • 40g (1/4 cup) sunflower seeds
  • 40.00 ml finely chopped dry-roasted hazelnuts
  • 21.00 gm fresh lemon juice
  • 18.20 gm olive oil
  • 1 long fresh red chilli, seeded, finely chopped
  • 7.20 gm honey
Instructions:
  • Preheat your oven to 190ºC. Place burghul in a heatproof bowl and cover it with boiling water. Let it sit for 20 minutes until tender, then drain and transfer to a large bowl.
  • 1. Prepare a well-oiled frying pan. Sear the lamb on high heat for 2 minutes per side until golden brown. Place the lamb on a baking tray and bake for 8 minutes for a medium cook, or until desired doneness. Rest the lamb covered with foil for 5 minutes before thinly slicing.
  • Boil beans for 2 minutes until bright green, then refresh in cold water. Combine beans, watercress, avocado, sunflower seeds, and hazelnuts with the burghul.
  • Mix together the lemon juice, oil, chili, and honey in a bowl. Toss in the lamb and dressing with the burghul mixture until well combined.
