Ingredients:
  • 2 medium pork sausage patties
  • 1 tomato
  • 2 tablespoons butter, divided
  • 2 slices bacon
  • 0.25 (16 ounce) package frozen hash browns, thawed
  • 1 (6 ounce) package sliced fresh mushrooms
  • 1 (15 ounce) can baked beans
  • 1 large egg
  • 2 slices bread
  • salt and ground black pepper to taste
  • 1 sprig fresh parsley, chopped
Instructions:
  • Preheat your oven to a piping hot 425 degrees F (220 degrees C).
  • Sear the sausages until golden on all sides in a skillet over medium heat for about 5 minutes, then place them in a baking dish.
  • Roast the sausages in the oven for 10 minutes until golden brown.
  • Score the bottom of the tomato with a cross and place it in the baking dish, cross-side up, with the sausages.
  • Bake sausages and tomato for 10 minutes, then leave them in the oven with heat off.
  • Heat 1 tablespoon of butter in the same pan and sauté bacon, hash browns, and mushrooms over high heat until mushrooms are soft, bacon is crispy, and hash browns are golden, about 7 minutes. Keep warm in the oven.
  • Heat beans in a small saucepan over medium heat, stirring frequently until warmed.
  • Break the egg into a skillet on medium heat. Let the edges turn opaque for about 1 minute. Cover, lower the heat to low, and cook until the whites are fully set, approximately 4 minutes.
  • Toast the bread until golden brown, then generously spread the remaining butter on top.
  • Assemble the sausages, hash browns, bacon, beans, tomato, mushrooms, fried egg, and toast on a warm serving plate. Season with salt and pepper, garnish with parsley, and serve right away.
