Super moist cake mix and creamy vanilla pudding create spooky Halloween sandwich cookies filled with delicious frosting.
Ingredients:
  • 1/2 cup butter, softened
  • 1 box Betty Crocker™ Super Moist™ White Cake Mix
  • 1 box (4-serving size) vanilla instant pudding and pie filling mix
  • 1/2 cup milk
  • 2 eggs
  • 1/2 cup from 1 tub (12 oz) Betty Crocker™ Whipped Fluffy White Frosting
  • 3/4 cup marshmallow crème (from 7-oz jar)
  • 1 cup powdered sugar
  • 4 teaspoons milk
  • Orange edible glitter
Instructions:
  • Preheat oven to 350°F and line a cookie sheet with parchment paper.
  • In a large bowl, use an electric mixer to beat creamy butter. Add cake mix, pudding mix, 1/2 cup of milk, and eggs. Beat on medium-high speed until well blended.
  • Using a 1 1/2-inch scoop, place dollops of dough slightly mounded about 1 inch apart on a cookie sheet.
  • Bake for 10 to 12 minutes until just set (avoid overbaking). Let cool for 2 minutes, then transfer to a cooling rack. Allow to cool completely, approximately 20 minutes.
  • In a medium bowl, combine filling ingredients until thoroughly mixed. Spread approximately 1 tablespoon of filling onto the bottom of one cooled cookie. Place a second cookie on top, bottom side down, and gently press the cookies together.
  • Combine powdered sugar and 4 teaspoons of milk in a small bowl, stirring until smooth. Drizzle the icing over sandwich cookies and sprinkle with edible glitter.
